I need recipes for pasta dishes…especially pasta / chicken combos that I can prepare in advance and bring with me to a potluck. Casserole type dishes would be great, but whatever.
PS. I would prefer to bring it warm to the potluck, but there will be provision to reheat my dish there.

pasta / chicken recipe to prepare in advance?
I need recipes for pasta dishes…especially pasta / chicken combos that I can prepare in advance and bring with me to a potluck. Casserole type dishes would be great, but whatever.

If you are interested in chicken, you need to be cautious about keeping it out of the "danger zone" 40 -140 degrees F.
I like Baked Chicken Parmesan, and it can be a good casserole.

Ingredients: Serves 4-6
2 chicken breasts
1 egg
2 cups bread crumbs (pre-bought or grind some crutons)
1 tsp Italian dry seasoning
1 jar spaghetti sauce (use your favorite)
2 cups or so mozzarella cheese
1/4 cup Parmesan cheese
4 servings of cooked spaghetti
Preheat oven to 400 degrees F. Pound chicken breasts to about 1/4 inch thick and feel free to cut the chicken into small pieces (bite sized). Dip chicken in beaten egg then dip in bread crumbs mixed with Italian seasoning. Spread 1/2 the jar of sauce on bottom of 13×9 inch baking pan. Place coated chicken in coated pan. Cover and bake for 20 minutes or until the chicken is definitely cooked through (no pink). Allow the pan to cool a bit.
While the chicken is baking, boil the spaghetti noodles to al dente.
Once the chicken pan has cooled so that you can touch it, mix the noodles and the other 1/2 jar of sauce in a bowl, then transfer the coated noodles and remaining sauce into the baking dish with the chicken, and mix to combine. Turn your oven down to about 200 degrees F and put the chicken in the oven to keep it warm.
Just before serving, top your casserole with Parmesan and mozzarella cheese.
