I need something to make using chicken and rice or potatoes. These kids don't like casseroles. Know of any recipes?

3 C. cooked pasta — shells, spirals, or macaroni
1 1/2 C. diced cooked chicken breast
1 C. broccoli florets, steamed and cut into bite-sized pieces
1/2 C. diced red pepper
1 C. diced sharp Cheddar cheese
1/4 C. diced sweet onion
1/4 C. slivered almonds
3/4 C. creamy Italian dressing

Mix all ingredients together, and chill. Before serving, add additional Italian dressing to moisten if necessary. Makes 4 generous servings.

Makes 6 servings.
2 cups low-sodium nonfat chicken broth
1 cup chopped onion
1/2 lb new potatoes, unpeeled and diced
1/2 tsp dried thyme
1/4 cup cornstarch
1 cup skim milk
1 small zucchini, diced
1 yellow squash, diced
1 green bellpepper, diced
1 red bell pepper, cored, seeded and diced
1 cup sliced mushrooms
1/2 tsp salt
1/8 tsp pepper
1 tsp Dijon mustard
1 tsp Worcestershire sauce
2 cups diced cooked chicken breast (one 10-oz package)

Topping
2 1/4 cups reduced-fat Bisquick
3/4 cup skim milk
Preheat oven to 450°F. Bring 1 cup broth to a boil in a large pot. Add onion and cook 3 minutes, until soft, then add remaining 1 cup broth, potatoes and thyme. Bring to a boil and cook 8 minutes, until potatoes are tender. Meanwhile, combine cornstarch and 1 cup skim milk and stir until smooth. To cornstarch-milk mixture, add zucchini, yellow squash, red and green peppers, mushrooms, salt, pepper, mustard, and Worcestershire. Bring to a boil and cook about 5 minutes. Stir in chicken and remove from heat. Pour into a 9" deep-dish pie plate. To make the topping, combine Bisquick and skim milk in a bowl. Using hands, lay topping over filling surface and tap it down. Bake 15 minutes or until top is golden.

Nutritional analysis per serving: 362 calories, 23 g protein, 55 g carbohydrates, 3.5 g dietary fiber, 5.1 g fat (1.2 g saturated fat), 41 mg cholesterol, 1,038 mg sodium

I had some great chicken fried rice in NY a while back at the koren town it was so good and have been looking to make something similar. I have gotten tired of my basic shrimp fried rice recipe.

KOREAN RICE

1 c. rice, uncooked (brown rice is excellent)
1 lb. ground beef or pork sausage, or combination
1 c. onion, chopped
1 c. carrot, grated
1 c. celery, sliced
Soy sauce to taste

Cook rice to almost tender as directed on package. Brown meat in frying pan and brown quickly the vegetables. Add the rice. Season with soy sauce during cooking and serve with soy sauce for each to add as desired. Can be put into casserole and put in low 300 to 325 degree oven for up to 1 hour.

OR

KOREAN FRIED RICE

1 lb. bulk pork sausage
1 1/2 c. onions, diced
3 green onions, minced
3/4 c. carrots, chopped
1/4 c. soy sauce
6 c. cooked then chilled rice

I need recipes for pasta dishes…especially pasta / chicken combos that I can prepare in advance and bring with me to a potluck. Casserole type dishes would be great, but whatever.

PS. I would prefer to bring it warm to the potluck, but there will be provision to reheat my dish there.

If you are interested in chicken, you need to be cautious about keeping it out of the "danger zone" 40 -140 degrees F.

I like Baked Chicken Parmesan, and it can be a good casserole.
