I like to marinade the chicken in fat-free italian dressing and grill. Very easy and very tasty. Stir-fry's are always a good idea.
Chicken Vegetable Stir-Fry
Recipe By: Quick Meals
Serving Size: 4
-= Ingredients =-
~~ — Marinade — ~~
3 tablespoons Oil
2 tablespoons Soy sauce
1 1/2 tablespoons Cornstarch
2 Chicken breast ; cubed
~~ — sauce — ~~
3/4 cup Chicken broth
1/2 teaspoon Sugar
1/4 teaspoon Crushed red pepper
~~ — Stri-Fry — ~~
1 medium Red onion ; halved and cut into 2/4" slices
2 cloves Garlic ; minced
1 Carrot ; jullianne
2 Green onion ; cut into 1" pieces
8 ounce Water chestnuts ; sliced
1/8 cup Walnuts ; halves or pieces
-= Instructions =-
Marinade chicken.
Make sauce, and set aside.
In wok, heat 1T oil, add chicken and cook about 3 min, remove.
Cook vegetables, 2-3 min, return chicken.
Add sacue and bring to a boil.
Add nuts.

We like balsamic chicken a pears…it is delicious!!!
Here ya go:
chicken breastes, boneless, skinless (as many as you need)
2 d'anjou pears (semi-hard)
balsamic vinegar
Cook the chicken breasts with a little olive oil in a pan until almost cooked through. Add a little balsamic vinegar to the pan (about 1/4 cup), to your taste. If you really like the flavor add a little more. Cut the pears into 8 wedges each. Pull out the chicken breasts, cook the pears and turn just till soft, not too long. Then put the breasts back in and cook till juices are not pink. These are delicious and great with cous-cous or a wonderful salad! Have a great dinner!
Oh, and if the vinegar starts to reduce, add some water. You don't want crusty chicken… :>)

Try this recipe for Teriyaki Chicken:
Ingredients
57 ml Soy sauce
57 ml Worcestershire sauce
2 tbsp Red wine vinegar
2 tsp Granulated sugar
2 Garlic cloves crushed
4 x 142 g Chicken breasts (cooked)
3 Spring onions
1 Red pepper
1 tbsp Oil
Description A healthy way of eating chicken with a quick and easy meal when you're short of time!
Instructions
Use ready cooked strips of chicken or breasts that have been grilled for approx 10 mins and cut into strips.
Mix together the sauces and red wine vinegar, and sugar, set to one side.
Soften the garlic in oil for a minute or two and add the sauces etc, fry for another 2 mins.
Now add the chicken pieces, spring onions and red pepper. Cook, stirring constantly for 4-5 mins until the sauce has thickened.
Can be served just with a crisp salad or cooked noodles.
Notes A more traditional way is to use a Teriyaki marinade to cover uncooked chicken strips and leave to marinade overnight or at least 30 mins. Stir fry for 6-8 mins after frying your garlic.

Well this is quick easy and good. Get some boneless chicken breast and put them in the crockpot. Top with salsa and cook in crockpot. Serve with rice. Yum

simple oven roasted @ 325degrees for 1-1/4 hours. Rinse and season chicken legs and thighs w/ garlic,salt, and pepper(I like cayenne, easy on the garlic) Check after 1 hour, smaller pieces may be done

COLA CHICKEN
(And more variations of recipe)
(My personal favorites….using this recipe
are the ‘wings & ribs….ummm good!)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)
Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking…to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!
You can double the recipe and use more pieces of
chicken….wings…would be ideal…add some hot sauce….presto "Hot Wings"!
I have used Ribs, just as good.
I tried this recipe with 'meatballs'….was equally
as good…served over rice.
I found another variation…..omit the catsup and add a small jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup….not).
You'd think a recipe with only '3' ingredients couldn't be messed up….wouldn't you??
Well…while I was preparing to fix the 'Cola Chicken' recipe
using Salsa…..I was also trying to carry on a conversation with my
husband…(just proves…I can't do two things at once)….mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola……..still turned out really tasty (to me)…might be a little sweeter than some of you like.
I fixed chicken wings, (using the above recipe)
but…I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet…(the kind you get to bake in the oven)…..I thought it was really good…..(but you/I can't find a 'bad' way to fix chicken).
Finally….!! I fixed the 'SALSA' chicken……that's good , too.
Another (bright)idea…..I thought of trying……replace the
catsup with a bottle of Shrimp Cocktail Sauce…and add a bag of (pop corn) shrimp…..!
Fixed the shrimp with cocktail sauce……eh…wasn't all that
great…was OK…probably won't be fixing it again.
Also tried beef stew cuts……that was pretty good…..I can see
myself making this again.
Served both over rice…..think the stew cuts would have been just as
good over noodles.
Gonna try some butterfly cut pork chopes…..or boneless chops…or pork steaks……should be good!
Try little cocktail wieners/sausages…for appetizers…..pork chops….pork steaks. (Maybe Vienna Sausages??)
CRUNCHY ONION CHICKEN
1 1/3 cups French’s Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten
LIGHTLY CRUSH:
Onions in a plastic bag.
DIP:
Chicken in egg
COVER:
With onion crumbs, press firmly to adhere to chicken.
BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.
Mushroom Chicken
4 boneless/skinless chicken breast (or any pieces you like)
1 can cream of mushroom soup.
1 can water
Place chicken in crock pot (or sauce pan for stove top cooking)
mix soup & 1 can of water together
pour over chicken
cook on medium heat until boiling then reduce heat and cook until chicken is really tender & falling apart.
Serve over noodles or rice or dressing….or???
